Singe Serving Vegetable Curry

Long time no see! I've been busy doing lots of things: carrying my 'sick' cat, study a bit and I already started spring cleaning.

The following recipe is an 'old' one but I discovered I have nog yet shared it with you. A meatless curry.


Single Serving Vegetable Curry

Ingredients

- 25 grams peas (frozen)
- 25 grams green beans, rinsed and chopped in halves
- 1 tomato, in parts
- 1/2 onion, roughly chopped
- 1/2 carrot, sliced
- 100-120 grams chickpeas (canned), rinsed
- 1/4 green pepper, sliced
- 25-35 grams coconut milk (unsweetened)
- 1/4 teaspoon garam masala
- 1/4 teaspoon cumin
- 1/4 teaspoon curcuma powder
- pepper
- olive oil

Method

Heat oil in saucepan, add onion and saute until onion is translucent. Add garam masala, cumin, curcuma powder, pepper and mix well.
Then add vegetables, stirring thoroughly to ensure they are coated with spice/onion mixture. Add tomatoes and water to almost cover the vegetables. If you want you can add 1/2 of a vegetable stock cube. Now add the coconut milk.
Cover with lid and simmer for approx. 10 minutes or until the vegetables are cooked to your liking.
