Carrot Cake Overnight Oats

Ok, it's weird, eating carrots for breakfast. I can eat carrots (raw or cooked) everytime. I often crunch on a raw carrot as a morning or afternoon snack, steam or cook them for lunch or dinner. Why wouldn't I add them to my breakfast too?

It's also a great idea to voluminize your portion.
And you can never be overdosed by veggies!

Carrot Cake Overnight Oats (Inspired by Angela from Oh She Glows)

Ingredients

- 25-30 grams rolled oats
- 100 ml (non dairy) milk
- 100 grams quark/yogurt/soy yogurt
- 5 grams wheat bran
- 50 grams of shredded raw carrots
- 80-100 grams of shredded apple
- a large (!) pinch of ground cinnamon
- vanilla extract
- a tablespoon of raisins
- optional: a few drops of stevia, maple syrup or agave
- optional²: walnuts! (or other nuts and seeds you like)

Method

Put ingredients into a medium bowl, mix them al together, cover the bowl with cling wrap and put in the fridge overnight.

Have a good night, don't forget to stretch your legs before you get out of bed, take a refreshing shower (or not), run to your fridge and uncover the bowl.

Banana Oatmeal Pancakes

This recipe is so amazing. Pancakes for breakfast are just superdeluxe.
Especially when it's made from oats and banana. The best part is: there are no eggs, butter or sugar involved. Just watch this:


Make this:

Banana Oatmeal Pancakes (serves one)

Ingredients:

- 1/4 cup rolled oats (instant)
- 1/4 cup milk (any)
- 1/2 teaspoon baking powder
- 1 small tablespoon whole wheat flour
- 1 medium banana
- cinnamon
- vanilla
- optional: a sweetener (I used Stevia drops)

Method:

In a bowl, stir oatmeal with flour, baking powder. Stir in milk and vanilla. In another small bowl or on a small plate, mash 1/2 banana with a fork and add to oatmeal mixture. Add cinnamon. If you want sweet pancakes, you can add a sweetener. I used 2 drops of Stevia.
Set aside.

Heat nonstick skillet or griddle to medium heat; brush lightly with some of the oil or with a baking spray. Divide pancake batter into 3 little pancakes on the skillet and cook for about 3 minutes or until underside is golden and bubbles break on top but do not fill in.
Turn and cook until underside is golden brown, about 1 minute.

Serve with leftover 1/2 banana and drizzle some cinnamon on top.

Now eat it.

The VERY best part of this is the fact this breakfast only contains 235 kcal.
I love the fact I can eat oatmeal in so many ways! This definitely is a keeper!

All Fluid

Oh boy, I don't feel well...


Fact: swollen glands.
Result: no solid foods.

Breakfast:

Oatmeal with apple and cinnamon.

Lunch:

Chicory soup with bacon

Snacks:


Blueberry vice cream

Cashews, pumpkin seeds and cranberries

Diner:

Pumpkin, but in soup with schrimps

And to kill the fever

Daily Eats: Tuesday, 3 May 2011

I loved my lunch more than my oatmeal breakfast today, so first a quick shot of my meal:


Grilled Panini Toast with low fat bacon, tomato, zucchini and a small easy salad on the side. Not that much, but i'm not that hungry today...
But it was delish. I love toast and bacon. Yummy in my tummy!

Breakfast:


Oatmeal with apple chunks and lots of cinnamon!

Dinner wil be a salad at work: red pepper, salad, corn, cucumber, spring onion topped with smoked salmon.

Snack:

Fruit, fruit, fruit: kiwi, mango and apple with sesame seeds and raisins.

No pictures: my camera battery is empty and I can't find my charger :(...

Wednesday Meals

Breakfast:

Oatmeal. Love love love oats. Can't get enough! With lots lots lots of cinnamon!

Lunch:

Pita-pizza with red pepper-tomato bruschetta, spinach leaves, bacon and pineapple chunks. Mmm...


Dinner:

Tonight, I want to have a warm dinner. The last two days, I only ate raw vegetables and my stomach really is asking for something cooked or stewed. So I stewed some vegetables and baked a Quorn Filet.


Sliced carrot, snow peas, French beans, zucchini and a yellow pepper. At the end, I added some leftover spinach leaves too. And lots of herbs!

I baked the Quorn Filet...

Can't wait for dinner time tonight...

Snacks today:

A Quinoa Oskri Bar (second on picture).


A big fruit bowl:


A kiwi, banana, Granny Smith apple, grapes an raisins. Toppings: sesame seeds and flax seeds.

My late night snack will be soy yogurt with my Quinoa Buckwheat Granola, and fresh blueberries.
I always add some shredded coconut and maple syrup too.
I don't have a picture. I'm just too lazy to snap a shot from my last meal of the day :).

I'm an addict

I really am an oatmeal-addict. It just makes my morning. I already start to panic when I discover my oatmeal storage starts to reduce. Result: I always have two containers of Quaker oatmeal in storage.

Just in case ;).

It is incredible I discovered oatmeal only two years ago. I have experimented a lot with my breakfast. In the past I ate only fruit for breakfast. Some people may know that it is one of the principles of Fit For Life, promoted by Harvey and Marilyn Diamond, two American writers. Other dietary principles of FFL is eating predominantly "live...high-water-content" food and avoiding eating animal protein combined with complex carbohydrates.

The last principle is something I always try to obey in my “hot, boiled or steamed meals”. But let’s talk about this later.

The fruit breakfast just didn’t work for me. The fruit quickly satisfied me, but only after an hour I felt hungry again. I had no control over my fruit portions. Sometimes I ate 8 apples at once. Just trying to fill my stomach. I could eat dozens of fruit but could not still my hunger. I tried to combine apples with grapefruit, pears, kiwi, strawberries etc. but the huge hunger never died. I had to try other things so I decided to eat more satisfying foods like bread or cereals. My daily sandwich with honey was born. I love honey. I love the natural taste of sweetness. Combined with a huge bowl of tea makes it an ideal breakfast. No hungry feelings after an hour. After this sweet breakfast I was able to function about 3 hours without eating anything. Superb.

But you know, I’m a woman and I feel bored quite rapidly. So after a while I wanted something new. I was curious and interested in what a ‘warm’ breakfast would do with me. Hot meals satisfy me better than cold (sandwich) meals. So I decided to try oatmeal. To be honest, I first didn’t like the taste, not even the texture of this dish. But now… I adore it! I love the taste of pure oats. I never add any kind of sugar, only a pinch of cinnamon. Did I say a pinch? I mean a spoonful of cinnamon. Not a teaspoon, what did you think?! A full tablespoon. Yes, cinnamon also makes my day.
