All Fluid

Oh boy, I don't feel well...


Fact: swollen glands.
Result: no solid foods.

Breakfast:

Oatmeal with apple and cinnamon.

Lunch:

Chicory soup with bacon

Snacks:


Blueberry vice cream

Cashews, pumpkin seeds and cranberries

Diner:

Pumpkin, but in soup with schrimps

And to kill the fever


... a Dafalgan!

Bye Bye Vice Cream

Ok...
Bummer...

My freezer broke down...

That means:
No vegan ice cream...

Sad story, but I will make it again and keep you updated!

Vice Cream?

On a hot day like this...

Everyone deserves a vice cream!

So I made one and this is the result:


Followed by a sad droopy face.


Yes, my mini food processor broke down...

That means no vice creams anymore. And it's summer...!

Bummer!

So I ate my frozen banana in chunks, with a dried fig.
Actually, it was ok. It tastes the same (duh!), just had another texture.
I drizzled some cinnamon on it and it made my day.

Tomorrow, I'll do the same.

Blueberry Vice Cream

Mmmm...


A delicious vice cream on a hot sweaty day. Do I need anything more?

The mixture:
- a very ripe frozen banana
- a handful of frozen blueberries

The tool:
- a food processor

The verdict:
- Yum!

Raspberry Cranberry Vice Cream

A New Fresh and Fruity Taste!


Raspberry Cranberry Vice Cream

Ingredients (serves one)
- one very ripe banana (ca. 100 gr)
- frozen raspberries (50 gr)
- dried cranberries (20 gr)

Method
Peel your banana first, cut them into small pieces and freeze for at least 3-4 hours.
Blend the frozen banana in your food processor or chopper until smooth. Add the frozen raspberries and cranberries. (The dried cranberries I used also came straight from the freezer: I like my dried fruits very cold and more chewy)
Blend the ingredients together until you get a smooth, ice-cream like pasta.

Eat straight away!

Gingerbread (Speculoos) Vice Cream

Yes, it's like a mixture of 'winter' (= gingerbread) and 'summer' (ice = banana).


Gingerbread from Lotus Bakeries = The Best and it's pretty vegan!

Compare:

100 gr Lotus Gingerbread (Speculoos) Ice Cream = 296 kcal.
100 gr Own Made Gingerbread Vice Cream = 108 kcal.

So totally dairy, egg free...

I loved my lunch too (I always do ;))


Shrimp Salad with steamed green beans, sweet corn, cherry tomatoes and salad.

So easy but so...

Mocha Vice Cream

In need of something sweet, 'chocolaty', I made another vice cream recipe:
Mocha Bean Vice Cream.


Here we would say: "Mokka-ijs".

Ingredients:
- A frozen banana (chopped in pieces straight from the freezer)
- 10 gr (8-10) mocha beans

Method:
Chop the frozen banana in a food processor. When the banana becomes 'crumbly', add the beans and chop again until the beans are cut in small pieces and divided into the banana.
Serve immediately.

Enjoy!

Green Salad and A Vice Cream Introduction

Urgh, I hate this wheater.
Monday: such a good day: 23°C, full sun, no cloud.
Tuesday: waking up from the pouring rain on my roof, cloudy but still 22°C, no sun.
This morning: sun, a little cloudy, 20°C.

I spent hours looking in my closet searching and thinking what the hell I should wear on days like these. One solution: layers!

Lunch today: A green salad with sliced ham.


Steamed broccoli, sugar snaps and green beans, topped with raw mushrooms and ham slices.
At the end, I splashed it with some tomato ketchup Balanz. Mmmm.

But now the most exciting moment of the day: when my foodprocessor chopped a frozen banana into a delicious ice cream!
I couldn't believe the video's and recipes on the internet: making ice cream with one ingrediƫnt?

Ok, look at the results:


Later that day, I tried it again and added some frozen raspberries:


Oh my god, this looks so much like real ice cream! In fact: it tastes so much better!
Don't you love the idea of eating an ice cream without any eggs, cream, milk, sugar and other additions?!

Just add your own:
- raisins
- dates or dried figs
- honey, agave or maple syrup
- own made cookies
- carob powder
- chocolate chips
- (pea)nut butter
- own made granola (!)
- ...

I definitely will share my experiences with you guys!
