Singe Serving Vegetable Curry

Long time no see! I've been busy doing lots of things: carrying my 'sick' cat, study a bit and I already started spring cleaning.

The following recipe is an 'old' one but I discovered I have nog yet shared it with you. A meatless curry.


Single Serving Vegetable Curry

Ingredients

- 25 grams peas (frozen)
- 25 grams green beans, rinsed and chopped in halves
- 1 tomato, in parts
- 1/2 onion, roughly chopped
- 1/2 carrot, sliced
- 100-120 grams chickpeas (canned), rinsed
- 1/4 green pepper, sliced
- 25-35 grams coconut milk (unsweetened)
- 1/4 teaspoon garam masala
- 1/4 teaspoon cumin
- 1/4 teaspoon curcuma powder
- pepper
- olive oil

Method

Heat oil in saucepan, add onion and saute until onion is translucent. Add garam masala, cumin, curcuma powder, pepper and mix well.
Then add vegetables, stirring thoroughly to ensure they are coated with spice/onion mixture. Add tomatoes and water to almost cover the vegetables. If you want you can add 1/2 of a vegetable stock cube. Now add the coconut milk.
Cover with lid and simmer for approx. 10 minutes or until the vegetables are cooked to your liking.

Roasted Veggies, Bacon, Rhubarb and An Expired Driver's License

Ola!

After a delicious oatmeal breakfast this morning, I was already craving for veggies at 11 a.m. I don't know what it is, but sometimes I just nééd roasted food. Is it the typical taste? The structure?
A toast, a panini, pita-pizza, roasted veggies, ...
So delicious and so so easy!

Luckily, I didn't have to go to the grocery shop. My fridge is stuffed with fresh veggies!

Finally lunch time:


In the mix: yellow pepper, zucchini, cherry tomatoes, sugar snaps, broccoli and asparagus. Protein: low-fat bacon (= heaven)!
Herbs: oregano, thyme, parsley, chive, salt and pepper.

I spent the afternoon in a park not for away. Too much sun and too warm to stay inside the house. Much vitamin D to take!
I snacked my fruit bowl over there, while reading magazines.
Oh yeah, an article about rhubarb (I just bought some today) and added actually some chopped pieces into my fruit bowl. In this case: vegetables with fruit = yum!
The ideal combination of sweet and sour!


In the bowl: mango, kiwi, banana, apple and rhubarb. Added some sesame seeds and raisins too.

I also studied a bit for my driver's license. Me, stupid girl, waited too long for doing my practical driving exam. The result: an expired driver's license...
Now, I have to do my theoretical exam again... Shoot me!

Roasted Veggies

Holy roasted vegetables!


Broccoli, cherry tomatoes, yellow pepper, carrot, zucchini.
Added a spoon of coconut oil, salt, pepper and lots of thyme!

And protein (!): Quorn Peppered Steak

Wednesday Meals

Breakfast:

Oatmeal. Love love love oats. Can't get enough! With lots lots lots of cinnamon!

Lunch:

Pita-pizza with red pepper-tomato bruschetta, spinach leaves, bacon and pineapple chunks. Mmm...


Dinner:

Tonight, I want to have a warm dinner. The last two days, I only ate raw vegetables and my stomach really is asking for something cooked or stewed. So I stewed some vegetables and baked a Quorn Filet.


Sliced carrot, snow peas, French beans, zucchini and a yellow pepper. At the end, I added some leftover spinach leaves too. And lots of herbs!

I baked the Quorn Filet...

Can't wait for dinner time tonight...

Snacks today:

A Quinoa Oskri Bar (second on picture).


A big fruit bowl:


A kiwi, banana, Granny Smith apple, grapes an raisins. Toppings: sesame seeds and flax seeds.

My late night snack will be soy yogurt with my Quinoa Buckwheat Granola, and fresh blueberries.
I always add some shredded coconut and maple syrup too.
I don't have a picture. I'm just too lazy to snap a shot from my last meal of the day :).

Cold Weather = Warm Lunch


Stewed vegetables (red and green pepper, broccoli, onion, snap (snow) peas) and quorn with Biona whole cherry tomatoes.

Now, I will make my lunch for tomorrow: my first quinoa salad!

Oven Dried Fruit & Vegetable-Challenge: part 2

After I reached my goal to make oven dried apple chips, I decided to 'oven dry' more.
The apple chips are a hit here at home. For the first time, my boyfriend was excited about my own made healthy and light snack.
Normally, he always says no to sweet snack. He is more a savory-snack-lover, snacks like potato chips, nuts, olives, dried tomatoes etc.
Me, I mostly crave for something sweet.

So, next goal is making my boyfriend happy, but also myself. How will I do that?
Making different dried snacks, both sweet and savory.

I will start my own 'Oven Dried Fruit & Vegetable'-Challenge.

Part 1: Apple Chips.

Fruits I got to d(t)ry:
- apple (succeeded)
- pear
- banana
- pineapple
- peach
- grapes
- cranberries

Vegetables I got to d(t)ry:
- potatoes (sweet!)
- parsnip
- carrots
- zucchini
- beets
- tomatoes

Yesterday, I tried a sweet potato, parsnip and carrots.

My opinion:

Vegetables need more time to dry than fruits. Next time I'll keep them longer into the oven. The taste is ok, but I like sweet crisps more.
I mostly liked the parsnip and carrots, but next time I will make bigger slices by cutting them lengthwise.


Oh, the directions?
Just slice your vegetable, put the slices on a parchment sheet en put them in a preheated oven (100°C/200°F). It will take 2-4 hours.

Next challenge: Oven Dried Pear!
