"Pasta" with Cod Filet and Cherry Tomatoes
Ingredients (serves one)
- 75 g zucchini, spiralized
- 75 g carrot, spiralized
- 30 g whole wheat spaghetti
- 10 cherry tomatoes
- a handful of rucola
- 1 cod filet - 150 g (fresh or frozen)
- herbs: basil, pepper, salt
- 1 tablespoon olive oil (lemon)
Method
Preheat oven to 180°C/350*F.
Cut a sheet of aluminium foil, place the cod filet in the middle and season with salt and pepper on top. Wrap the foil. Put the "papillotes" on a tray and cook in the oven for about 10-15 minutes.
Meanwhile, cook whole wheat pasta until 'al dente' according to package directions.
Heat olive oil in a pan and add spiralize carrot and zucchini.
Heat a medium sautée pan over high heat with the olive oil and add spiralized carrot and zucchini. Stir. Now add cherry tomatoes, whole wheat pasta and rucola. Stir well and stew for about 3 minutes.
Take a deep plate en decorate with the pasta, vegetables. Top with cod filet.

I used a spiralizer from the brand Gefu. Bought it in a special cooking shop, but saw it in a supermarket too. But you can use a julienne peeler too. Cheaper, but less practical.
