Veggie Tabouleh

Oh lovely veggies, oh lovely couscous.
Let's mix you two together.


Veggie Tabouleh
Ingredients (serves 1)
- 40 g whole wheat couscous (or millet, or bulghur, or ...)
- 50 g red pepper
- 75 gr carrot
- 100 gr broccoli
- 70 gr crispy sweet corn

- dried salad herbs
- balsamic vinegar
- lemon juice

Method
- Cook or steam the broccoli for about 7 minutes.
- Cool and chop into little florets
- Prepare couscous (see package) and cool
- Chop the red pepper into little pieces and grate carrot
- Mix all ingredients and add the vinegar, lemon juice and salad herbs
- Eat it all!
