Pan-Seared Cod with Pumpkin Puree and Spinach

An easy dish I just want to share with you. Because it's good, healthy and tasty.


Pan-Seared Cod with Pumpkin Puree and Spinach

Ingredients (serves 1)

- 1 cod filet
- 1 tbsp flour
- pumpkin puree (see recipe)
- 200 gr fresh spinach leaves, sauteed
- olive oil or butter
- pepper and salt

Method

Place the flour on a plate. Season the cod with the salt and pepper and then coat it in flour, shaking to remove any excess. Set aside.

Melt 1 tablespoon of the butter in a small skillet over medium heat and add the cod.
Cook until for about 10 minutes, but flip over after 7 minutes. The 'crust' must be golden brown.

Take a deep plate, cover it with (warm!) pumpkin puree and add sauteed spinach on top.
Now place the fish on top.

Enjoy!
