Pea & Spinach Curry (Soup)

I don't know what I've eaten an hour ago. But I do know it was pretty tasty!
Be prepared for a heartwarming curry (or soup?), perfect for these cold days.


Pea & Spinach Curry (Soup)
(serves one)

Ingredients

- 70 gr peas (fresh or frozen)
- 100 gr fresh spinach leaves, rinsed well
- 1 small carrot, chopped
- 1/2 onion, chopped roughly
- 10-15 green beans, chopped
- 20-30 gr millet
- 25-30 gr coconut milk
- 1/4 vegetable stock cube
- 1/2 cup water (or more)
- 1/4 tsp garam masala
- 12 tsp curry powder
- 1/4 tsp cumin seeds
- 1 tsp olive oil

Method

Heat olive oil in a pan and add chopped onion. Cook and stir for about 5 minutes. Now add the garam masala, curry powder and cumin seeds and stir well. Add greens beans, chopped carrot and cover with 1/2 cup water, stock cube and coconut milk. Let cook and stir every 2 minutes.

Now add millet, peas and spinach leaves and let simmer for about 5 minutes.

Make sure every vegetable is tender enough.
