Chunky Granola

Hi guys!

I finally found what I was looking for: a granola recipe to become real granola ‘chunks’. My version with buckwheat and quinoa also tastes very good, but I love it when I can eat en taste (feel) real clumps/clusters in my soy yogurt or milk.

Chunky Granola
Slightly adapted from Chocolate and Carrots

Ingredients:
- 1 ¼ cups old-fashioned oats
- 1 ¼ cups quick cooking oats
- 1 cup rice crisps (like Rice Krispies)
- ½ tablespoon ground cinnamon
- a pinch of salt
- ½ cup natural (unsweetened) apple sauce
- ¼ cup honey
- ¼ cup light brown sugar
- 1 tablespoon maple syrup
- 1 tablespoon brown rice syrup
- 1 tablespoon canola oil
- 1 teaspoon vanilla extract
- ½ cup sliced almonds (unsalted)
- 1/4 cup pumpkin seeds (unsalted)
- 1/8 cup sesame seeds
- 1/8 cup sunflower seeds (unsalted)
- ½ cup raisins
- ½ cup cranberries
- (a few chopped dried abricots)


Method:
1. Preheat the oven to 150°C.
2. Set aside a baking sheet with parchment paper.
3. In a large bowl, combine both oats, rice crisps, sliced almonds, cinnamon and salt.
4. In a separate bowl, combine the apple sauce, honey, brown sugar, rice syrup, canola oil and vanilla extract.
5. Stir the wet ingredients into the dry ingredients.
6. Pour the granola on the baking sheet and press the oats together so they can stuck together and become real chunks.
7. Place the baking sheet in the oven (one on the top, one on the bottom) checking the oven every 10 minutes and stir if needed.
8. Bake for a final 35-45 minutes, until completely dry and golden brown.
9. Add in the raisins, cranberries and other dried fruit you want and let the granola cool completely on the baking sheet.
10. Store in airtight containers.

  3. I love some my granola to be chunky as well, but I've never really known how to make my homemade granola chunky so thanks for the recipe!
