Raspberry Jam Cookies


Making a pizza?


A strange one, no?

You're right, that isn't a pizza!
I'm making cookies! For a friend of mine who invites me on a BBQ.
And is there a better gift than own made cookies? And granola? And coconut macaroons?


Can you see how the raspberry jam is bubbling in the hot oven? Yum!

And the result:


Raspberry Jam Cookies
Ingredients
• 180 gr all purpose flour
• ½ teaspoon baking powder
• a pinch of salt
• 125 gr butter (cold, straight out of the fridge)
• 125 gr granulated sugar
• 1 egg yolk
• vanilla extract
• 150 gr raspberry jam (with lots of seeds!)

Method

Preheat oven to 350°F/180°C. Line a baking sheet with parchment paper.
Sift together flour, baking powder and salt.
Use two knives to cut the butter into little pieces into the flour mixture until the dough becomes crumbly.
Add sugar, vanilla and the egg yolk and mix until well combined.
Knead the dough until you become one huge dough mass.
Divide dough in two and put them separately in a freezer bag. Store in the fridge for at least two hours (or overnight).
Roll out one of the two dough masses on the parchment paper and flatten dough with a rolling pin. Cover with lots of raspberry jam.
Flour your table and roll out the other dough half and cut into small strips. Cross over the raspberry jam.
Place them on the middle rack of the oven & bake for until 20-30 minutes or until the edges begin to golden.
Cool and cut shapes with a cookie cutter.
Store into an air-tight container.
